Oolong Tea Processing

What is Oolong tea? Oolong Tea is a tea processing method, controlling the oxidisation level from 10%-85% to create a unique flavor. Below is the whole process of Oolong tea processing.

STEP 01 

Tea Plucking

Tea in Mingjian, Taiwan are mainly harvested through machine. The fresh tea leaves are been plucked and shipping to tea processing factory.

STEP 02

Sunlight Withering

This is the process of evapotranspiration and fermentation are taken place under the sunlight. The tea master started to control the fermentation level.

STEP 03

Indoor Withering and Stirring

After the adequate sunlight withering, tea leaves are been collected to move into the air-conditioned room. Tea masters will laid the tea on the bamboo treys, continuing the fermentation.

STEP 04

Tossing

Tossing is the key to make the special aroma of oolong tea, the friction between tea leaves cause the damage of the leaf margin cells, accelerating the fermentation. The strongest aroma comes out at this moment.

STEP 05

Fixation

Fixation is the procedure to keep the aroma fixed at the best time by deactivating the enzyme through pan-firing machine.

STEP 06

Shaping

Tea leaves are been squeezed into ball shape through machine, it takes a day to finish the repetitive process.

STEP 07

Drying

Drying is the key to remove the unwanted smell, stabilizing the aroma of oolong tea.

STEP 08

Roasting

Different from drying, roasting must comes after the drying part. Most of the tea seller roasted the tea through roasting machine to refined the aroma, taste.
